Chocolate  Pudding

>Tofu is amazing. Try this:

>One brick of tofu (any firmness), two or three teaspoons of soy or rice
>milk, a half a cup of unsweetened cocoa, and sweetener (honey or maple syrup,
>etc.) to taste. Put in all in your blender and whip it up. Pour it into a
>bowl. Let stand in the refrigerator for at least a half-hour. Take out and
>serve. Viola! The best chocolate pudding you have ever had. Fast, easy,
>dairy free and healthy!

Thank you for posting this great idea! I made it last night, and it was a hit. I adapted the "recipe" a little, so I just thought I'd share what I used:
Firm Silken tofu (gives it a *really* smooth texture)
a little peanut butter (makes it taste a little richer!)
unsweetened cocoa powder
honey (or vegan substitute)
vanilla

[Susan's Note: I used one box of silken tofu, about 1/4 cup of cocoa, which was probably too much, about a tsp. of vanilla, a dash of salt, and probably 1/4 cup of sugar. Blend in food processor.]
