Sesame Tomato Sauce

Makes 4 cups

I use this sauce over spiral pasta. It has an unusual taste and is a great alternative to traditional spaghetti sauces.

  • 1 tsp. cold-pressed olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, chopped
  • 1 28-oz can of tomatoes, chopped
  • 1/2 tsp. toasted sesame oil
  • 3 Tbsp. soy sauce
  • 3 Tbsp. maple syrup or barley malt syrup
  • 1 tsp. dried basil
  • dash of ginger
Heat the oil in a large skillet. Add the onion and garlic and cook, covered, over medium heat until the onion is limp and translucent, about 10 minutes. If the onion starts to brown, reduce the heat.

Add all the other ingredients and cook, covered, for 30 minutes. Remove the cover and cook for 10 minutes more to boil away excess liquid. The sauce will be chunky. If you prefer a smooth sauce (I don't), puree in a blender or pass through a strainer.
